A rum made from a blend of molasses rums from Panama, matured for a minimum of 12 years in American oak casks previously used to age bourbon.
Tasting note provided by the producer: Nose: Attack – warm, pronounced; Mid-palate – dried exotic fruits, caramelised apple and pear; Finish – bitter orange zest, cocoa, mild tobacco. Palate: Attack – liquorice, spices; Mid-palate – herbaceous notes, cocoa, citrus, grilled wood. Finish: coffee, cardamom.
Dark and Stormy recipe. Ingredients: 50 ml The Demon’s Share 12-year-old rum, 10 ml lime juice, 3 dashes of Angostura bitters, 90 ml ginger beer. Method: pour all the ingredients except the rum directly into a glass filled with ice and stir briefly. Then gently pour the rum over the cocktail to create the stormy effect. Garnish: a lime slice. Glass: highball.
