AMBRE NOIR
This is Guillaume’s founding cuvée. It pays homage to the rum-making tradition of the port city of Marseille. ‘For centuries in Marseille, Saint James rum from Martinique was aged, as well as rums from Jamaica, Saint Lucia and elsewhere. It was permitted,’ he explains.
The composition of the Ambre Noir cuvée has evolved over time, thanks to its creator’s experiments and juice supply issues. The rums are blended to be aged in Muscat de Beaumes-de-Venise barrels at Château des Creissauds. The result is a complex, rounded and aromatic blended rum, the perfect ‘everyday’ cuvée for enthusiasts and beginners alike.

LES RHUMS FLAMANT
Much has been written about these rums, which are 100% produced in the PACA region (Var for the cane, Bouches-du-Rhône for distillation), but we never tire of them. The sugar cane was planted by horticulturist Kévin Toussaint and currently covers 6,000m2.
These are varieties that are well suited to the region, which has historically produced sugar for centuries. They are usually harvested (by hand) at the end of the year to avoid frost. Initially, the crushing was done in a grape press (which didn’t last long!), but a small mill has since been purchased.
Distillation takes several days depending on the batches and is carried out in a pot still. The result is a white rum unlike any other, with notes of fresh cane, smoke (a little like agave) and brown sugar. A delicious and unique product, now in its fourth batch!

LES DAMES – JEANNES
We love this selection of fine white rums from around the world: South Africa, Corsica, Mauritius, Cape Verde, the Canary Islands, Panama, Guadeloupe, Jamaica… Each of these rums is left to rest in open demijohns for several weeks to several months, during which time it will aerate and improve. This ancient method of ageing is borrowed from the finest eaux-de-vie of eastern France and works wonders with rums that are all bottled at the traditional Royal Navy strength… 57%.

BOUCAN D’ENFER
This is the perfect blend to convert a peat lover to rum. It refers to the buccaneers, pirates who used to smoke their meat (boucaner). And there is smoke in this juice from five destinations: Trinidad (molasses), Guyana (molasses), Mauritius (pure juice), Martinique (agricultural) and Martinique grand arôme (molasses), which have been blended and then aged in ex-peated whisky casks from Islay (Scotland). The flavours are peaty, iodine and candied fruit. Dividing, but exciting!

AMPOV
Guillaume is involved as an advisor to the Ampov distillery in Cambodia alongside Ralph Meyer. The sugar cane is local, as is the distillation process, which uses copper pot stills… This produces very expressive pure cane juice rums in white at 45% and 55% ABV. Add to this Guillaume’s expertise in maturation and you get an amber rum aged in ex-cognac casks for 6 months.

BRASSEURS D’ENFER
Beer lovers, this rum series is for you! Guillaume Ferroni has experimented with finishes using different types of beer (barley wine, imperial stout, etc.) from various microbreweries in Marseille. Some have a smoky peat flavour, others are more cereal-based… In short, give them a try!

LES GROGUES – VULCÃO
Guillaume is therefore involved in the Music e Grogue adventure with Jean-Pierre Engelbach, but he has also launched his own brand of Cape Verde grogue (Vulcão). He has also invested in a distillery and ageing cellar in Tarafal on the volcanic island of Santo Antão. This is the cuvée we invite you to discover: Vulcão is a hybrid product between agricultural rum, high-ester rum and fruit brandies.

LES BRUTS DE FÛTS – BELIZE 2007
This was long the trademark of Ferroni, before everyone else started doing it. These cask-strength rums have given rise to dozens of vintages over the years, making it difficult to choose just one. They are also essentially unique and destined to disappear once drunk.
But they showcase Guillaume’s expertise in selecting casks and maturation-ageing. If you really have to choose, try the Belize 2007 Cask Strength, a molasses rum from the only rum distillery in Belize. It has been aged for three years in 56-litre cognac micro-barrels in a humid cellar.
