The sugarcane, certified organic, is cultivated on the site of Fazenda without any pesticides, herbicides, or fertilizer.<\/p>\n<p>It is cut by hand and processed on site within 24 hours of harvest. After a natural fermentation, the distillation is done in a single pass through a copper still.<\/p>\n<p>The cacha\u00e7as are rested in stainless steel tanks and for some of them, aged in French oak barrels and Jequitib\u00e1 rosa, a sacred tree of the Brazilian Cerrado, for one to two years.
