J.M Rums unveiled a new reference, “Terroir Volcanique” not to be confused with “Fum\u00e9e Volcanique”. <\/strong><\/p>\n

\"JM<\/p>\n

It is a blend of rums, of at least 3 years, aged in new American oak barrels whose wood has benefited from two different types of heating.<\/p>\n

One of the barrels was toasted strongly to “extract notes of vanilla, honey, woodiness, and empyreumatic sweetness”<\/em> while the other barrel was toasted in an extreme way “to bring volume and roundness in the mouth with flavors of flamb\u00e9ed tropical fruits and a hint of nutmeg”. <\/em><\/p>\n

Experiments on toasting are facilitated at J.M. as Karine Lassalle, the distillery’s cellar master, explains: “At Rhum J.M., we like to play with the toasting of the barrels which allows us to develop specific aromas. We are fortunate to have our own cooperage within the distillery, which allows us to experiment on a daily basis”. <\/em><\/p>\n
