For our summer series, we have chosen to give the floor to those who make rum. We are asking each of them the same questions. So, naturally, after my studies I joined the family business to try and bring my contribution to it.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><b>Rumporter: In your opinion, when does a rum stop being rum?<\/b><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Olivier Couacaud: This is a long debate. As far as I\u2019m concerned, I think that rum classifications need to be revised, rather than saying that rum has stopped being rum. To start, I think that we would all agree that the word \u201crum\u201d means alcohol made from sugarcane, whether that is the pure juice, sugarcane honey or molasses. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">It therefore seems quite natural for these different base materials to be classified:<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 rhum traditionnel for those made with molasses;<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 rhum agricole for those made with pure juice;<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 and so on for the others. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">I think this would provide more transparency for the consumer. <\/span><span class=\"s2\"><br \/>\n<\/span><span class=\"s1\">Next, for each category, sub-categories could be defined, like for whisky:<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 for a white rum, \u201cpremium\u201d for example, would be used for rums aged for 2 years and having the minimum amount of brewing;<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 for an aged rum, \u201cpure\u201d means \u201cno additives except colour\u201d and \u201cblend\u201d means \u201cblending, addition of caramel, wood extracts (etc.)\u201d;<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 for a spiced rum, flavours and sugar can be added (with a maximum cut off);<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 for a rum-based liqueur, sugar above Xg\/litre; <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u2013 etc.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">I think that, nowadays, all types of rum have their own clientele and no matter how the product is classified, it will always hold a place with its fans, as long as the relation between taste and price remains appropriate.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Case file &#8211; The great debate on the redefinition of rum : Olivier Couacaud \u2013 Commercial Director of the Rhumerie de Chamarel, Mauritius<\/p>\n","protected":false},"author":1,"featured_media":19714,"comment_status":"closed","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[1592,5436,1575],"tags":[1915,1912,1555,1556,1913,1914,1916,1917,5443,1574],"class_list":["post-19716","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-case-file-the-great-debate-on-the-redefinition-of-rumm","category-editorial-rumporter-en","category-interviews-rumporter-en","tag-case-file-rum","tag-chamarel-en","tag-cocktail-a-base-de-rhum-en","tag-cocktail-rhum-en","tag-couacaud-en","tag-dossier-redefinition-rhum-en","tag-mauritius-rum","tag-redefinition-of-rum","tag-rhum-en-3","tag-rhum-en"],"_links":{"self":[{"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/posts\/19716","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/comments?post=19716"}],"version-history":[{"count":0,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/posts\/19716\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/media\/19714"}],"wp:attachment":[{"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/media?parent=19716"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/categories?post=19716"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/rumporter.com\/en\/wp-json\/wp\/v2\/tags?post=19716"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
